Laos (Part 2)

Papaya Salad

A traditional Laotian side dish.

Total time: 20 minutes
Servings: 6-8

Ingredients

  • 3 medium ripe papayas
  • 2 cloves garlic, minced
  • 2 small red chilis, deseeded and minced
  • 3 tablespoons shrimp paste (see previous post on this blog)
  • 1 1/2 tablespoons fish sauce
  • 4 tablespoons sugar
  • 3 tablespoons lime juice
  • 10 cherry tomatoes, halved

Directions

  1. Peel papayas. Cut in half. Scoop out seeds and discard. Shred papaya and set aside.
  2. Mash garlic and chilis together using a meat tenderizer or mortar and pestle.
  3. Drain the excess juice from shredded papaya. Then add the mashed garlic and chilis, shrimp paste, fish sauce, sugar, lime juice, and cherry tomatoes. Mix thoroughly.
  4. Serve.

Sri Lanka (Part 2)

Gotukola Sambol

Traditional Sri Lankan salad with a strong but refreshing flavour.

Total time: 15 minutes
Servings: 6-8

Ingredients

  • 2 bunches Italian flat-leaf parsley (substituted for Sri Lankan gotukola)
  • 3 tablespoons white onion, finely chopped
  • 1 medium tomato, diced
  • 50g unsweetened shredded coconut
  • 50g sweetened shredded coconut
  • 2-3 tablespoons lime juice, to taste

Directions

  1. Rinse parsley. Chop coarsely.
  2. In a medium bowl, combine parsley, onion, tomato, coconut, and lime juice. Use tongs to mix the salad until ingredients evenly distributed. Serve.

German Cucumber Salad

Crunchy and slightly sweet. Pictured above (top) with chicken schnitzel (left) and german spinach with ham (right).

Total time: 35 minutes
Servings: 4-6

Ingredients

  • 2 large cucumbers, peeled and thinly sliced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup lemon juice
  • 4 tablespoons sugar
  • salt and pepper to taste

Directions

  1. Combine all ingredients in a non-metallic bowl.
  2. Chill for 30 minutes and serve.

Germany (Part 1)

German Spinach and Ham

A savory German side dish.

Total time: 20 minutes
Servings: 4-6

Ingredients

  • 500g fresh baby spinach
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 200g cooked ham, thinly sliced
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • pepper to taste

Directions

  1. Steam spinach, drain excess liquid, and set aside.
  2. In a large skillet, saute onion and garlic in butter until tender.
  3. Stir in spinach, ham, nutmeg, salt, and pepper.
  4. Heat through and serve.
